Sassy Superbowl Chocolate Chip Cookies


For those of you with a sweet tooth, this is a great sassy version of chocolate chip cookies!

Ingredients: (makes 25 cookies)

3 cups almond flour
1 tsp. baking soda
1/4 tsp. Himalayan salt
1/4 cup extra-virgin coconut oil, melted
1/4 cup coconut syrup (or pure maple syrup)
1 large egg
1/4 cup egg whites 
1 tsp. vanilla extract
1/2 cup dark chocolate chips

Directions:

1. Preheat oven to 375 degrees.
2. Combine almond flour, baking soda & salt in a bowl and mix well.  
3. Beat oil & syrup with a mixer until creamy.
4. Add egg, egg whites & extract and beat for an additional 2 minutes.  
5. Add almond flour mixture to egg mixture and mix well.
6. Add chocolate chips and mix until blended.
7.  Drop by tablespoon full onto baking sheets covered in parchment paper.  Flatten cookies with spatula.  Bake for 14-16 minutes into golden brown.
