Fish Friday - Chili Lime Shrimp

Happy Fish Friday everyone! Todays recipe is an awesome shrimp with chili lime sauce (serves 4).

Ingredients:

2 Serrano chilis, seeded & chopped
1 chopped garlic clove
1/2 cup lime juice
1/4 tsp grated ginger
1 tsp coconut sugar
1 tsp salt
1lb shrimp
8 oz arugula
3 tbsp. grated Parmesan

Directions:

1. Add chills & garlic to blender with lime juice, coconut sugar & salt.  Blend until smooth.
2. Preheat grill pan.
3. Rub chili mixture onto shrimp and place on heated grill pan.  Cook until pink (about 3 minutes per side.)
4. Place arugula on plates & put cooked shrimp on top.  Drizzle with extra chili mixture and top with Parmesan cheese.  Enjoy!
